Tea Cake Recipe

On a cold weekend, there is nothing as comforting as a hot cup of tea and some tea cake. Enjoy.
  1. Procedure

  2. Soften butter with a spatula until smooth.
  3. In a bowl combine vanilla, lemon rind, orange rind and butter.
  4. You may use a hand held beater or a whisk to gradually beat in sugar until the mixture is soft, white and fluffy.
  5. Add eggs, one at a time, beating well after each addition.
  6. Sift flour, baking powder and salt. Fold into mixture alternating with milk.
  7. Take a mini loaf pan 6×3x2 and grease it. Bake for 50 minutes at 375 degrees.
  8. Allow cake to stand for a few minutes before turning out.
