Stuffed Mushrooms

Even the people who don't like mushrooms will be tempted to try this recipe

  2. First we prepare the filling. In a small frying pan heat 2 tsp. of oil over low heat. Add mustard seeds and when they start to pop, add garlic and fry till light golden brown. Then add besan, cumin powder, coriander powder, red chilies, and salt to taste. Continuously stir the dry mix till it turns reddish in color. Turn the heat off, stirring the mixture till it cools off completely. Now add water and lemon juice and mix with fingers. Make sure no lumps are formed. Set this stuffing aside in a bowl.
  3. Remove the stems of mushrooms, so there is cavity on each top for filling. Fill each of the mushroom buds with half tsp of filling and set aside.
  4. In a large frying pan heat 2 tbsp. of oil. Gently place each mushroom in the pan with stuffing side facing upwards. It is best advised not to overstuff the pan, but rather fry mushrooms in batches. Cook the mushrooms for 10 minutes in this position till light brown.
  5. Now turn each one of them over so that the stuffing is against the pan. If you feel he mushrooms look they are dry then sprinkle 1 to 2 tsp. of water over them.
  6. Repeat the same procedure for the rest of the mushrooms.
  7. Place all of them on a serving platter and garnish with fresh cilantro.
  8. Your dish is ready to serve. Enjoy!!!!
