Tea Cake Recipe - By Mru Govande


On a cold weekend, there is nothing as comforting as a hot cup of tea and some tea cake. Enjoy.

Ingredients

  • 1 1/3 cup flour
  • 1 cup butter softened
  • 1 cup powdered sugar
  • 2 Eggs
  • ½ teaspoon grated lemon rind
  • ½ teaspoon grated orange rind
  • ½ teaspoon vanilla
  • ½ teaspoon baking powder
  • Pinch of salt
  • 6 teaspoons milk

Procedure

  1. Soften butter with a spatula until smooth.
  2. In a bowl combine vanilla, lemon rind, orange rind and butter.
  3. You may use a hand held beater or a whisk to gradually beat in sugar until the mixture is soft, white and fluffy.
  4. Add eggs, one at a time, beating well after each addition.
  5. Sift flour, baking powder and salt. Fold into mixture alternating with milk.
  6. Take a mini loaf pan 6×3x2 and grease it. Bake for 50 minutes at 375 degrees.
  7. Allow cake to stand for a few minutes before turning out.
    1. Note: You may double the recipe and try baking with an 8×8 cake pan.
